Ever since we first tried Sea Salt back in 2008 we have wanted to meet and interview Chef Lucas Manteca. And then, when he made the move to The Ebbitt Room, one of our favorites dining spots in South Jersey, we REALLY wanted to meet and interview him. Finally, we recently got that chance. This is part one of a very interesting interview when you get to know where Chef Lucas has come from and where he is going with his cooking.
